Description
This is a Kanetsugu Pro-S Gyuto 8.25" Chef Knife. It is in unused condition with some shelf wear. The Pro-S series knives are made using Kanetsugu's original hardening method of using ice to forge the blade. The heated knife is cooled to -70 degrees instantly, making the knife very durable. The blades are made from AUS-8 Molybdenum Vanadium stainless steel and hold an excellent edge.
