Widely respected as a cutlery manufacturer, Kanetsugu crafted swords for more than half a millennia before adding kitchen cutlery to their manufacturing in 1918. This folding santoku is lightweight with a plastic handle and slipjoint blade with backspring to keep the blade open and closed (not a lockback but with divots/detents). The blade is sharp and made of stainless steel, AUS-8 or similar steel. Nice to have in camping supplies as an outdoor kitchen knife. This is an unused vintage old stock knife found in a Seki, Japan warehouse.
