This is a set of three traditional Japanese sushi chef knifes made in Seki Japan. Knives included are a Yanagi, Deba, and Nakiri style. The Yanagi is 13" long overall with a blade length of 8.06." The Deba is 11.37" long overall with a blade length of 6.12." The Nakiri is 11.75" overall with a blade length of 6.56." These chef knives are for the sushi chef, but many also use it for poultry and vegetables as well. The Nakiri is hollow ground, and the others are sharpened on one side to form a single bevel edge for more precise and uniform cutting edge. The blades are AUS-8 stainless steel. The handle is made of wood with black bolster. Comes in original gift box.
