Description
This is one of the best production made fillet knives of all time. Designed by Phillip Hoffman, founder of Lakota and Condor knives, this knife was made in Seki, Japan by K. Yoshida in the 1980s. The Condor 87SSG features a micarta handle, stainless bolsters, and a sturdy 9" long AUS-8 stainless steel blade. Made to be a fillet knife, but stiff enough to be a boning knife as well. This is a recent Seki warehouse find.
