The KC-707 Petty Knife features a NKS32 high carbon steel blade and a wood handle with steel bolster. The petty knife is a Japanese-style paring/utility knife. It is the perfect tool in the hand for peeling and preparing fruits and vegetables, as well as beautifying dishes with elegant cuts and garnishes. It can also be used as a petite chef knife, which is ideal for smaller hands.
