Description
The KC-550 Funayuki-Deba features a white steel #3 core/soft iron blade and a magnolia wood handle with plastic bolster. Funayuki-deba are a hybrid of the funayuki and deba knife. Funayuki are thin blades which were used on fishing boats to filet little fish. The Deba is thicker for complete butchering. Combined together, these two styles are excellent for butchering and filleting whole fish. Also great for poultry, and any meat with small bones.
About the Minamoto Kanemasa B-Series:
Knives of this series are high-grade Japanese-style kitchen knives for professional use. The cutting-edge blade is made of Hitachi white steel #3formed during forging with a soft iron for high cutting performance and longer edge retention.
